My Favorite Messy Recipes
I happen to be an incredibly messy cook (just ask my husband). This is the main reason I make aprons. Here are some favorite recipes that my family and I enjoy (sometimes on a weekly basis). I am always looking for new recipes, so if you have any, please contact me, and I will post them with your first name only.
Homemade Tortillas
3 cups flour 1 tsp baking powder 1/2 tsp salt 1/2 cup shortening 1 cup water
Mix the dry ingredients. Cut in shortening with pastry cutter. Stir in water until just combined.
Let rest (covered) for at least 15 minutes.
Take egg sized pieces and roll into a circle on a well floured surface. Heat a dry skillet. Cook till lightly browned, turning once. Serve with favorite fillings (taco, fajita, egg scrambler, etc.)
Better Than Sex Cake
2 cups flour 1 cup butter and 1/2 chopped walnuts or pecans
Mix together with fingers to make a fine crumb. Press into bottom of 13x9 pan.
Bake at 350 degrees for 10-15 minutes (or lightly browned).
Combine 8 ounces softened cream cheese, 1 cup sugar, and 1 cup cool whip. Spread onto cooled crust.
Mix 2 1/2 cups milk and 2 small boxes instant pistachio (or other favorite) pudding. Spread onto cream cheese layer.
Top with additional cool whip. Keep refridgerated until serving.
Favorite Family Recipes (Jacobs Side)
Wild Rice Casserole
This recipe came from my Great-Grandma Dolly (Elizabeth).
1/2 cup butter (or 3 tbs. olive oil for those who are health consious) !/2 cup brown rice 1/2 cup wild rice (unpopped) 3 cups broth (I use a combination from Knorr's, 1/2 vegtable and 1/2 chicken)
Melt butter (or olive oil) and add brown rice. Cook rice until golden. Add to caserole dish along with broth and wild rice. Bake at 350 degrees for 1 1/4 to 1 1/2 hours.
Excellent with roasted chicken and green beans!
Beef Stroganoff
2 pounds steak cut into narrow strips (easiest to do when partially frozen)
1 tbs oil 1 onion diced 2 cloves of minced garlic
Saute meat, onions and garlic in oil.
Add 4 cups beef broth and 2 tbs of tomato puree.
Simmer for 2 hours.
Combine 1 cup of beef broth (not from the pan) with 3 -6 tbs flour (depending on desired thickness of gravy). Add thickener to pan to make a gravy. Simmer until completely thickened.
Add 1/3 cup sour cream and stir well.
Serve over cooked egg noodles. Feeds four (unless you have been snitching the meat!).
Grandma Dolly's Buttermilk Pancakes
Grandma Dolly was quite the traveler. During the 20's and 30's she traveled everywhere, including a logging camp where she got this recipe.
2 cups butter milk 2 tbs sugar a dash of vanilla
3 eggs 1 pinch of salt
Combine all these ingredients.
In a small bowl, combine 1 1/3 cups flour and 1 tsp baking soda. Gently stir in (don't overmix, will be lumpy). Check consistancy and add more flour if needed.
Pour 1/4 to 1/3 cup dollops onto hot greased griddle. Cook until bubbles pop on top and edges are dry. Turn. Plate them with plenty of butter and real maple syrup!
Homemade Egg Noodles
This recipe is so simple to make (only 2 ingredients). It just takes a little time is all.
2/3 cup of flour for every 1 egg.
Stir egg to break up the yolk. Add the flour and combine until smooth. Wrap with plastic wrap. Let rest at least 30 minutes. Roll out, on a well floured surface, thin and cut into desired shaped (a ravioli or pizza cutter works great for this). Toss with flour. Add to broth or salted water that is at a rolling boil. Cook until tender (10-15 minutes).
Ultimate Pie Crust
1 cup flour 1/2 tsp salt 1 tsp sugar 1/4 tsp baking powder
Stir the dry ingredients together. Cut in 5 tbs very cold butter. Work quickly until mixture resembles course crumbs.
Add 3-5 tbs icy water with a squirt of lemon juice added to it (for tenderness)
Stir with a fork, working until dough sticks together when squeezed. Form a disk, then wrap with plastic wrap and refriderate 1/2 hour at least or overnight.
Roll to desired thickness and fill.
